Bubble & Squeak

1 tbsp oil or butter
4 rashers of bacon/ham, chopped
1 onion/leek, finely sliced
1 garlic clove, chopped
Leftover veg e.g 15-20 sliced Brussel sprouts, shredded cabbage, chopped carrots, peas
400g cold leftover mashed potato, or cold crushed boiled potatoes
1 egg, beaten (optional)
Salt and pepper

Make this vegetarian by swapping the bacon for grated cheese and afried egg on top!

The ultimate Christmas leftover recipe


  1. Heat the oil/butter in frying pan, allow it to get nice and hot, then add the chopped bacon/ham. Add 1 finely sliced onion/leek and 1 chopped garlic clove.
  2. Next, add the leftover veg (Brussels/cabbage/carrots etc) and let it all cook for 5-6 mins.
  3. Add 400g cold mashed potato. Work everything together in the pan and push it down so that the mixture covers the base of the pan. You can add 1 beaten egg to bind it together if you want.
  4. Allow the mixture to catch slightly on the base of the pan before turning it over and doing the same to the other side. It’s the bits of potato that catch in
    the pan that define the term ‘bubble and squeak’, so be brave and let the mixture colour.
  5. Carefully remove from the pan, cut into wedges and serve.
