Cooked roast dinner leftovers (any meat or vegetables)
Half a cup rice
2 cloves of garlic
2 tbsp oil
Season with salt, pepper and herbs of choice
- First, cook the rice. Measure half a cup of rice for 2 people, with 6 cups of water and follow the packet instructions for cooking. Drain the cooked rice and set aside. See our rice recipe and video for more details.
- In a large frying pan heat 2 tablespoons of oil and add a chopped onion and 2 crushed cloves of garlic, cook for 2-3 minutes to soften.
- Chop up your cooked dinner leftovers into small equal pieces. Add your chopped leftovers to the pan and fry for about 5 minutes, until golden.
- Stir in the cooked rice and season with salt, pepper and a handful of chopped fresh herbs (or 2 tablespoons dried mixed herbs). Add 2 teaspoons chilli powder if you want it spicy.
