This is a delicious recipe that uses up all those green tomatoes that can be collected from UKHarvest's Community Food Hubs.
Enjoy the cake hot or cold, and create an amazing dessert using an ingredient that is often dismissed.

200g green tomatoes
4floz oil
200g sugar
2 eggs
120g self-raising flour
1/2tsp baking powder
Pinch salt
1/2tsp ground cinnamon
1/2tsp ground nutmeg
1/4tsp ground ginger
100g sultanas, raisins or other dried fruit
50g chopped nuts or seeds (optional)

Method
- Preheat the oven to 170C. Grease and line an 8inch round cake tin
- Chop the tomatoes into small chunks, and set aside.
- In a mixing bowl, whisk together the oil, sugar and eggs until thick and creamy.
- Add the dry ingredients, one at a time, folding in carefully after each addition.
- Finally fold in the chopped tomatoes, until evenly combined.
- Transfer the cake mix to the prepared tin and bake for 45-55 minutes, or until a knife inserted into the centre of the cake comes out clean
