Avocado Smash


2 avocados

½ red onion

8cm length of cucumber

½ lemon

5 cherry tomatoes

Chili (optional)

Drizzle of olive oil

1 tsp of balsamic vinegar

Salt and pepper to taste


  1. Prepare the avocado. Cut in half around the stone and twist to break apart. Remove the flesh by running a spoon around the skin and removing the flesh. Cut avocado into squares and add to a mixing bowl.
  2. Slice the piece of cucumber in half and remove the core using a spoon, finely dice the flesh and put into the mixing bowl.
  3. Finely dice the red onion, tomatoes, garlic and optional chili and add to the bowl.
  4. Season with salt and pepper and add a drizzle of olive oil and the balsamic vinegar.
  5. Enjoy on a slice of freshly baked bread
