90g Dark Chocolate (approx. 72% cocoa) 90g Milk Chocolate (approx. 35% cocoa) 150g light brown sugar 40g cocoa powder 70g ground almonds 5 ml vanilla extract ½ tsp bicarbonate of soda 2 x Avocado, mashed up finely 3 medium eggs
Preheat the oven to 185C
Break the chocolate up in to squares and place into a heat-safe bowl. Place your bowl onto a saucepan with hot water in it. Stir your chocolate over a simmering heat until it’s a liquid. Remove from the heat.
In another bowl, beat the eggs with the sugar, add the melted chocolate mixture, the cocoa powder, ground almonds, vanilla extract and bicarbonate of soda. Mix well. Add the mashed avocados. Mix in well.
Lightly grease a deep metal baking tray (8”x 8) and line with parchment paper. Pour the brownie mix into the tray. Spread it out evenly. Bake for about 35-40 mins until a skewer comes out clean. Leave to cool before cutting into pieces.
